Today we had our annual brisket potluck. Terry put the brisket in the oven to slow roast this morning (for 7 hours) while Dawn made up her homemade salsa and guacamole. She also prepared a big pot of beans and corn-on-the-cob. Paul & Marcie contributed potato salad and 2 homemade chocolate pies. I am very particular about my potato salad and hers was terrific! (I think it's that we all become accustomed to 'how Mom' always made it, right girls?) And the pies were yummy too! Never had chocolate pie with meringue before, but I like it!

Dick & Lou brought baked red potatoes w/onions and Larry & I did a green salad and stuffed jalapenos. And for dessert, Jack & Barb contributed a pineapple upside down cake with vanilla ice cream. (To go along with the chocolate pies). Oh my, we were all in hog heaven! By the time I finished my dinner plate, my tummy was just too full to enjoy dessert, so I had a small bite of both desserts from Larry's plate, and brought mine home on a to-go-plate for later!

The sunlight was playing on the rocks while we ate, making for a pretty backdrop. And as the sun began to sink, Jack built our campfire. We gathered round until about 10pm chatting about every subject you can imagine. The best was about the local squirrels. We haven't had many this year, much to Onyx's disappoint. She loves to 'play' with them. Paul & Terry were talking about the escapades of one in particular. When Paul's son was here with his rig (prior to us arriving) one little guy kept finding a way inside and filling his cupboards with pine cones! The guys would empty them all out (put them in the fire ring) but by the next day they would all be back in the kitchen cupboards! Too funny!

By 10pm, it was getting a bit chilly so we all headed home, very full and quite contented! It didn't take Larry and I long to decide it was time to hit the sack. I haven't gone to bed this early in a long time, but I am ready tonight. So goodnight all, thanks for checking in.....
